Buridibud Vegetable Soup. Recipe for Dinengdeng.

  1. Sweet potato. Diced.
  2. Tomato. sliced
  3. Bagoong (referred to as fish sauce, pour enough amount according to taste)
  4. Moringa fruit peeled
  5. Skinned Lima beans
  6. Alucon (Bungon in Ilocano Term)
  7. Squash Flower with its stem skinned
  8. Yam Beans (mildly crushed so the aroma and sweetness will come out)
  9. Eggplant
  10. Grilled Milk Fish (other fish can be an alternative and it can be fried instead of grilled. I prefer Grilled beacuse of the scent and taste.)

Making a Buridibud vegetable soup by Ilocanos is easy! All you need are fresh vegetables and just follow this Buridibud recipe for making this type of Dinengdeng.

  1. Boil half litre of water in a cauldron.
  2. Add in the bagoong (shrimp paste).
  3. Put in the sweet potato. Boil until the sweet potatoes are cooked. This Buridibud is best served if the sweet potato is a bit overcooked. (It is said that this vegetable soup is called buridibud because of the overcooked sweet potato. Its the most sensible reason i researched as to origins of the name Buridibud.)
  4. Put in the tomato. Boil until cooked.
  5. Mix in the rest of the vegetables into the boiling pot; Moringa, lima beans, yam beans and himbabau.
  6. Add the Eggplant and Grilled Milk Fish (Bangus). Boil until the eggplant is cooked.
  7. Place the Squash flower on top. Cover it. Wait 5 minutes and you have a Buridibud vegetable soup ready to serve.

Philipine Food Fact:

Many Asians use the leaves of Moringa like spinach and also the fruit it produces as a vegetable, like asparagus. Both the leaves and the fruits of the Moringa are very nutritious, full of Vitamin C and other minerals.
