Zabala’s Tikoy Especial
The TIKOY (Chinese New Year pudding) is a standard delicacy for Filipinos especially during the celebration of Chinese New Year. Filipinos, even those without Chinese lineage, to enjoy a slice of tikoy during Chinese New Year and even during the Christmas holidays.

The Zabala family in Lucena City, Quezon province are well known inthe country and other parts of the world because of their special TIKOY delicacy. Yes, TIKOY Lucena.
However, the ZABALA Tikoy is not the tikoy I grew up with, the chinese tikoy that needs cooking. The traditional chinese tikoy that can be wrapped with egg then fried to golden brown crisp.

The ZABALA Tikoy is ready to eat out of the box. The ZABALA Tikoy looks like caramel candy, it is chewy and not too sweet, just the right blend. This very popular tikoy is hand made in the Zabala residence under the watchful eye and supervision of the family matron, Mrs. Zabala.
The ZABALA Tikoy is NOT EASY to cut though, it is very dense and sticky - an oiled knife is needed to cut into tiny clean portions. For this reason, the ZABALAs also offer their Tikoy in bite sized packaging.

We personally met Mrs. Matilde Pabello Zabala, who makes this delicious tikoy. She and her late husband have been in the tikoy food delicacy business since 1951. And up to now, she still manages the cooking and distribution of the Zabala tikoy. I think what makes their tikoy special is the right blend of the quality ingredients and her passion for cooking. Tikoy making may be a simple Filipino business but with passion and dedication to their craft, this tikoy business has enabled the Zabalas to see their children through school, too.

So don’t forget to taste the Zabala Tikoy whenever you go to Lucena City in the province of Quezon. The Zabala Tikoy is available at all pasalubong stores in the city of Lucena.
Stay tuned for more TSIBOG stories, food from Lucena City and the province of Quezon.
